I've got a desktop and can't speak for the Powerbook hard drives but you might want to phone Apple or an Apple store to inquire about the crunches and noises. Sounds odd to me.
As for the sluggishness, I still feel to this day that OSX has a bit of delay after everything you do when compared to OS9 or a Windows machine. That said, you might have some real problems. Make sure you have current software and drivers for everything and make sure you're running the most recent version of OSX (10.2.6). One thing you need to do periodically is verify and repair the permissions, and this makes a tremendous difference in performance if something was in fact messed up. I do this once a month or after installing any new hardware. The procedure is as follows:
Insert original OSX install CD, restart computer, hold down the "C" key so computer boots up off of CD. The OSX installer window will come up (like you're going to install the system software), but instead, go to the "File" menu and choose "Open Disk Utility" (or something like that). Now go to the "First Aid" tab, highlight your hard drive, and then click the "Verify Permissions" button. You'll see it go through the process and it will list any permissions that are incorrect. Now click the "Repair Permissions" button to remedy these. That's it. Just restart and things should be running better.
One other thing: I've heard some people say that updating the system software via the Software Update program has caused problems. Instead, you might want to simply download the new updates from Apple's website and then run them on their own.
