The weisman is fun to look at but the interior is pretty spare. I think the Minneapolis Institute of Art is much better. There are lots of great ethnic food places on Nicollet between downtown and 28th Ave S. If you like vietnamese, Quangs (26th and Nicollet) is really good. Go for a walk along the river parkway, get a cup of coffee at the Dunn Brothers next to the Milwakee Road Depot (201 3rd in downtown Mpls), catch a show at first ave, Grab breakfast at Al's in Dinkytown...
Suggest that you avoid the Mall of America. Suggest that you avoid the suburbs as well - they're identical to any other suburb you've ever been to.
If you've got the time, several places are worth the drive: SE Minnesota (Red Wing/Winona for scenery, apples, and trout fishing), Duluth (for scenery, hiking, and lake superior), St. Croix (for scenery and antique stores geared toward 45yr old women).
