And if they did, that would be fine, considering the majority of early human factors engineering work came out of the aerospace industry...
The knob is a very intuitive and flexible interaction device. Properly implemented, you have an infinite or near infinite number of settings, can easily modify the acceleration rate for fine versus coarse, etc. It can also be done with +/- buttons but not as elegantly (think alarm clock).
If you've ever used an Agilent scope (the ones with the large wheel) versus the button-a-rama of other brands you know what I'm talking about.
Volvo's curves and such hints a bit of Infiniti interiors, too.
