You are confusing two things. One is getting the coolant hotter, as a lesser flow, and the other is the temperature of the coolant.
You need to consider the total heat pickup in the engine and loss at the rad. Looking at the temperature only is not right.
The amount of total heat rejection does not change drastically with minor deviations of flow through the stat.
A hotter stat effectivley reduces the average flow rate through the stat and the heat from the engine is carried by less flow, so the coolant temperature is going to be higher.
The stat controls the coolant temperature, not the engine temperature. The average coolant temperature determines the temperature of the engine.
