Here are a few websites that I think are informative. IMO, many of the health claims of omega-3 fatty acids are inflated. Looking at Udo Erasmus' websites, they look to cure just about everything. Nonetheless, many eating westernized diets are probably somewhat deficient in essential fatty acids (EFA's). The full blown EFA deficiency syndrome has only been described a couple of times in the medical literature, to my knowledge.
From these websites, I think you'll find that flax seed is probably the best source of alpha-linolenic acid, an omega-3 EFA. The omega refers to the carbon, numbering from the end of the molecule farthest from where it attaches to glycerine to make a glyceride (as in triglycerides), at which the first double bond starts. Therefore, it is inappropriate to call these "omega" fatty acids, as this does not tell you which unsaturated (ie, having at least one double bond) fatty acid you're talking aboug, and not all unsaturated fatty acids are essential.
There has been some evidence that EPA (eicosapentaenoic acid) and DHA (docosopentaenoic acid) play a role in preventing heart disease, and you get good amounts of these in cold water fish. The reason cold water fish have more unsaturated fats is that double bonds, aka unsaturation, within the carbon chain of a fatty acid renders the cell membrane containing fats with these fatty acids more fluid at colder temperatures.
