Without a mechanics license or ASE certification or other qualifications you might be on shaky ground. Even if you drummed up some kind of a form to record the inspection, how would the factory know you performed the work correctly without accredation of some kind.
Most of the stuff that gets inspected wouldn't likely need warranty work, or wouldn't be a warranty item, brakes, exhaust, and the like. And most of what will need warranty coverage, like missing pixels in the SID requires no inspection. I would imagine that if you had a warranty issue with an item you were supposed to have inspected there might be an issue, but that wouldn't void the entire warranty.
Why risk it just to save a few bucks? Or at least have an independent or someplace, even a service station, who has qualified techs and can write a service ticket for documentation, do it.
There's a slight possiblity that you'll need "good will" for something to be paid for by Saab after the warranty expires, like a SID or a DIC, servicing at the dealer will make that more likely.
