Seven hours sounds about right, plus or minus a few. You'll find that weather/road conditions will play a bigger role than traffic and driving habits. The 55 and the 20 are major highways so they should be in decent shape. Speed limits are relativly the same, posted in Km/Hr instead of Miles/Hr. The secondary roads in Quebec can be pretty bad.
Canadians tend to move right along on the highway. Find a local to tail and you should be able to make "good time". Good luck, enjoy Quebec City, it's a great place. Be sure to check out the old city, really fun part of town.
