I have the same problem with backpacks when riding my road bike (pack is perched unstably high on the back). The messenger bag is better in this sense, especially one with a 4 point harness. The best backpack I've found for riding (and running too, for that matter, though I only do that when chased...) is a torso pack from Ultimate Directions, which fits securely onto the lower back. Unfortunately, it doesn't have a lot of volume --but life is full of tradeoffs.
I love night rides as long as its not raining. Good lights make all the difference.
