on my chopping boards and butcher blocks and have always used mineral oil. Follow the instructions on the bottle but generally rub a coat on about once a day for a week or two when new and then reapply about once a month. This is what I do for my stuff at least. REMEMBER raw meat and block counter tops DO NOT mix unless you are absolutely anal retentive and OCD about your mineral oil applications, meaning applications once a week, and then it is still somewhat risky.
