I think it's nice to be versatile. Cars are so woven into our daily activities, that to not be able to drive a manual creates a big disadvantage.
I think your only option is to have someone else teach her, preferably a driving school. However, you need to make sure that you attend driving school at the same time and learn some new tricks, because otherwise she'll feel singled out.
My wife took driving lessons in high school but lived in a big city and rarely drove. So when I met her in college, she wasn't a proficient driver, and she'd never driven a manual. She ended up getting her dream summer job prior to hear senior year, banding birds on a wildlife refuge. The only catch was, the pickup that she was going to use was a manual. We had no car to practice on at the time, so, LOL, we practiced shifting while sitting in an ordinary chair, the day before she was to leave for her job. Feet moving to approximate the motions of clutch and gas pedal, you know. When I went out and visited her, her handling of the manual was jerky, and sometimes she killed the engine, but she did all right. I kept my mouth shut, since she was getting from point A to point B OK. And seeing her driving that pickup with her hair pulled back, out in the desert, well, that pretty much did it for me. We were married about 1.5 years later. We have had nothing but manual tranny cars - a VW Rabbit and five Saabs.
