i usually start with the Carrol Shelby's chili mix (yes, the same Carrol Shelby as the fast Fords of the 60s)
i leave out the big yellow packet (masa harina) because i don't like how gritty it makes it taste.
i usually leave out the cayenne packet and put in an assortment of fresh chilis, whatever i can get at the store, for 3 gallons i would add a dozen jalapeños, and at least a few habaneros, plus a bunch of others if they had fresh ones at the store.
i concur on the chipotle in adobo, i've had the La Morena brand ones, and they are yummy. great in scrambled eggs! and their chipotle sauce is yummy as well.
i have been known to put in a blob of peanut butter and some unsweeteneed chocolate, so you know i'm no chili purist. it's diffferent every time, but it's always good.
most important? LOTS of garlic!! at least one head per half gallon.
