So much to do, so little time. For ocean water sports you'll need a good wetsuit, a "4-3" or a "3-2" full suit will do or even a shorty and you can rent them lotsa' places as well as boards, diving equipment and sailboats. The surfing, diving and sailing will depend on the conditions, but fortunately what's good for surfing is usually bad for diving and sailing so you'll get some kinda' water activity in. The water is still real decent at 59-62 right now, you won't need booties for surfing.
We have some major amusements parks in San Diego, Sea World, the world Famous San Diego Zoo and Wild Animal Park, but for many that's for the kids. We also have Tony Award winning regional theater at the Old Globe and the La Jolla Playhouse, more of an adult thing. If you have a car at least drive through Balboa Park. Enter on the Laurel street side, the west side, that's where the Old Globe, art museums, San Diego Auto Museum, and the very cool San Diego Aerospace Museum are. Lotsa' cool buildings, gardens, the world's largest outdoor organ, can be seen withoug getting out of your car. Also in a car drive out to Cabrillo National Monument at the tip of Pt Loma for a spectacular view of San Diego. Another destination might be the world famous Hotel Del Coronado on Coronado Island. You could knock that drive out in half a day, breakfast at the Del, drive through the park and then out to Cabrillo Nat'l monument.
The Gas Lamp district has the hottest clubs and restaurants with Pacific Beach (PB) a close second. The Boardwalk in Mission beach just south and adjacent to Pacific Beach is a trip. If you stayed at say the Catamaran in Pacific Beach you could do the watersports thing, hang out on the Boardwalk, there's a lovely classic wooden rollercoaster on the Boardwalk as well as a cool artifical wave machine at an outdoor bar/burger place called the WaveHouse, and sample the PB nightlife from walking distance. The Catamaran rents Hobie Cats and sailboats too for use on Mission Bay and is 1 block from the beach and the Boardwalk.
From PB you could drive to downtown and the Gaslamp, about 10 miles, and check out the sidewalk scene.
