Yes, that's a very good point. The biggest issue with wind is the inability to dispatch it. For example, outside of solar, all the other generators can be told went to and how much to generate, within certain parameters of course. Some respond better than others; hydro generators are typically very flexible, coal generators are not as much (most coal and nat gas plants like to be turned on and left on - they don't like to be moved around much unlike a hydro plant).
Power plants drop off line all the time and like you mention, the grid responds, sometimes it's very easy (you have other generators not being used that can be brought up to resupply) other times you don't have that luxury. Plus you also coordinate and schedule the return of that tripped plant. The problem occurs when you have a 300MW wind farm that can literally go from 0 generation to 300, and back down to 0 in an hour. Multiply that by 2-3 wind farms and other generation that can't respond to those variations and you begin to have reliability issues (backing down a coal plant, then ramping it back up when the wind dies down only to have it trip off line magnifying the problem). Then pair that with the ancient transmission lines we have...it's just not pretty.
It's going to take a pretty big investment in the overall system to be able to absorb the changes we are seeing. It will eventually happen, but it's going to take time and money. And as you know, that cost gets passed on to the rate payer.
