I worked in a body shop a few years ago and it was very common to get dust inside the car, BUT we cleaned and detailed every car BEFORE they left the shop. It didn't matter if the car was there for a $100 job or a $6000 job, they all got cleaned. Exterior wash and wax, interior vacuumed, armor-alled inside and out, windows washed, etc.
I've been doing bodywork for 20+ years and have always found it's easier to wet sand and polish fresh paint the NEXT DAY while it is still soft. Waiting until it's cured is actually more difficult, but giving them the benefit of the doubt, maybe for them it's their way of doing things.
Paint on the glass can come off with a variety of methods. Razor blade, urethane reducer, rubbing compound, wax and grease remover....
Paint on the plastic dash is a tough call. Reducer could probably remove it, but they'd have to be careful that it won't do any damage > like discolor the plastic. Wax and grease remover might be the better option.
If they used plastic and emblem adhesive on the emblem, then it's not coming off without damaging the paint. The glue actually melts fresh paint. If they used 2-sided tape, then they might be able to peal it right off and stick it on the correct way.
I'd give them one opportunity to finish the job, even though they should have finished it before it was released to you.
