Normally you have a gauge set that makes the evacuation and recharging easy. Hook the high side (red knob) of the gauge to the high side fitting on the car, low side (blue knob) of the gauge to the low side fitting, then the center to the vacuum pump. My gauge has a second fitting on the center hose connection that is used for the refrigerant can hose.
Open the red and blue valves, pump the system down for 45 minutes. Close the valves for 5 minutes and see that the system holds a vacuum. Connect the second yellow hose to the can tap, then open the blue and red valves. When you get up to 30 PSI in the system, close the red valve and start the car. Two 12 ounce cans of R134a should do the job.
If you don't have a gauge set, now is the time to get one. Otherwise you have to do all the work through the one low side hose, and you have to move the hose from the vacuum pump to the refrigerant can tap without filling the system with air.
