A "rule of thmb" for A/C systems is that the discharge temperature should be 55F, and since the air is never as cold as the coil, the coil temperature may be 50F.
But! Home A/C systems are never as closely designed as commercial systems, componenets (furnace blower, evaporator coil, compressor, condensor coil, most older units use a capillary tube to regulate the gas flow rather than a thermostaticly controlled expansion valve) are selected based on what is close to ideal. The amount of humidity to be removed from the air also should be considered.
Since your thermocouple is inserted into what is a space for air flow, if it is reading air temerature and not coil temperature, the reading meets the ideal "rule of thumb" criteria.
You are correct that an over-charged coil will produce temperatures higher than desired (because the gas cannot expand properly since the pressure is too high). An undercharged unit extracts too much heat and gets the air too cold - at least until the coil surface temperture drops below 32F and the coil completely freezes over, blocking all air flow and stopping all cooling!
