Start with a small hole that you can recover from or live with under a picture frame. With a flashlight and mirror, look for pipes or electrical cables that are in that space. Near by electrical outlets are also a clue. Look at the wall from the other room as well.

One can also find drain pipe vents going up through a wall. Inspections from an attic or basement can sort some of that non-destructively.

Determine if the wall is load bearing before you get started.

There are some gas water heaters with fan powered exhaust discharge to go outside. That replaces the convection gas transport of the chimney. These can be complex with interlocks that prevent the burner from coming on until a motorized damper 'door' limit switch indicates that that is open. There can be a purge cycle where air is drawn before ignition, to avoid an explosion in the heater if the gas shutoff valve has a leak. There may be an interlock switch that detects that the fan is actually moving air. If there is a power failure, you cannot make hot water. There is probably not going to be a pilot light, but spark ignition of a start pilot and an interlock to detect a flame there before turning on the main burners. This has all of the complexity of a gas furnace and may share some common components. The gas discharge will be quite hot, not cool and damp like a condensing furnace. The exhaust pipe will be metallic, perhaps stainless and there will be a specific discharge fitting for penetration of the exterior wall.

There might be some heaters that have a plastic discharge that can manage the heat, but that idea might be trumped by considerations of a fault in the system leading to much higher temps than normal. And plastics can become brittle with time and higher temperatures.

A basic gas water heater is passive with no complex controls, interlock switches and motors. It will work when there is a power outage. Water tanks do not last forever. I would be concerned that all of that complexity and expense would have a life-time limited by the life of the tank. If the tank could be replaced and the most of the controls, fan motor and damper motor could be transferred to a new tank, I would be comfortable with that.

A gas water heater with a forced convection fan may not be silent. I know someone with such a heater and it makes more noise than one would want if there is any basement living space.
