There are laws about this stuff, and the parts suppliers will know how many cars are out there that will need replacement parts. They'll continue to make them. So even if Saab were to vanish you could still be able to get parts, especially the everyday stuff like brakes, exhausts, struts and shocks, glass, etc.
There are companies still making parts for cars that have long since ceased production, and the same will be true of Saab should it come to that. If there is money to be made from parts, a parts company will find a way to make it.
