Tire "rubber" compound lasts a long time when placed in an enclosed location like the spare tire well. The more volatile components quickly fill the space and inhibit more of the volatiles from evaporating out of the compound. Synthetic "rubber" is essentially a very viscous liquid mixture: just like a cup of water left out in the open would dry out, but a cup with a lid can keep the water for a long time as the partial vapor pressure under the closed lid keeps the rest of the water from evaporating.
When tire "rubber" gets too old, you can see surface cracks. Surface crack is indicative of that the "rubber" has lost too much of the volatile binding agents to keep the remaining fillers together. Don't use tires with too many (or deep) surface cracks.
I keep extra 15" full sized wheels with tires on-hand for my 9-5 and 9-3 because I don't like driving on donuts. When the tires get down to 4/32", the whole wheel+tire pair become spares for me. Spare wheel strategy was one of the considerations for my choosing the 9-3 convertible over a BMW convertible (that and the much greater usable power of the 9-3).
