the impedance is the full resistance. Or the resistance in short. Most of the amplifiers - whenever built-in, external, (MOS)FET-, bi-polar-, tube-, hybrid-, monolithic or whatever type are the voltage sources. I.e. they give you the voltage.
Keeping the voltage constant and varying the load (the resistance of the load) we're varying the current going thru the load AND amplifier's output stage: lower the load -> higher the current. And yes, when it comes to a current, too much can really be too much. That's why they specify the minimum allowed load (speakers' impedance) for their amplifiers.
Some designs incorporate special elements and units which monitor the current flowing thru the amp's output stage. Some not.

So the moonspeak above brings us to the following bottom-line:
- if your new amplifier does not have any protection circuits at its output stage, then you can burn it if push it really hard. But at small volume it will be ok.
- if your new amplifier incorporates some protection on its output, then when you push it over the limit, it will turn off itself. Just lower the volume (or reset - literally: turn off and back on) and it will be back fine
- if your new amplifier incorporates state-of-the-art egg-headed protection on its output, then it just won't turn it on. I.e. it will be inoperative, but only until you re-connect speakers with recommended impedance (8 ohms, if I read you correctly).
