Issues with my car at body shop, plus general insurance

So long story short. My ex backed into my pristine and heavily moded 2002 Saab 9-5 Aero Wagon and damaged the front bumper beyond repair (bumper was from a 2005 9-5 Aero).
Went thru her insurance for damages, found a body shop I like and started the process 2 months ago.
The body shop made me wait a month till all the parts where in. I dropped the car off, picked up a rental, and now a month later...still no parts.
It appears there are no "new" bumpers available period for this car (of course it's a Saab) and the only option is to find one from a wreck which could be another two months of waiting or so.
F that.
First off I bought the original bumper on the car brand new, had it painted and mounted about a year ago. Not to mention most of the car was repainted. Pristine almost show-room condition as I mentioned.
Secondly the black trim pieces on these 04-05 bumpers are molded into it. They're not replaceable. Considering the amount of $ I've spent over the years I don't want to settle for used parts with possible damage to the trim pieces (all trim pieces on the car are new).
What are my options here? Zero? Screwed? Is there a limit as to how long I am supposed to wait for parts?
