$7250 is a great settlement. (I'm curious what their first offer was?)
I would look for a Viggen or 9-5 Aero. I would also bolt those wheels onto whatever Saab you end up with. One of my all time favorite Saab wheel designs.
I had a 1985 BMW 325e get broad-sided (she ran a stop sign). The insurance company offered $2400 (this was in '99) on the first go around. After fighting with them and documenting what made my car different than the "comparable" cars they used to determine the value (not that they ever actually produced a list of cars for sale), I got $4995 and my car back.
I parted it out, swapped the good parts to the new (to me) car and moved on. Tee estimates I got to repair mine were all over $6K.
I would fear that your rear hatch will never seal correctly again if you have your car fixed.
