Late to the party, but here is my take.
I have had a Salsa Mukluk 2 for a couple of winters now. (CO Front Range)
The snow conditions need to be just right. ie Wet, deep, untouched snow sucks, but fluffy fresh snow is super fun, as are groomed trails (snowmobile, x-country skiers) Different conditions require different air pressures. It is truly bizarre to be hauling through snow pack on < 10psi and then run across a dry section of dirt. It feels as if someone grabbed onto to your rear and you are dragging them behind as your steering slogs too.
I have ridden (even raced) my fatty in the summer. This too is fun as they handle surprising well, provided your air pressure is correct. (also provided you can handle the beating of a fully rigid) My current drool worthy bike is a fully suspended fatty. They are getting the weights down ($$$ up though) and the suspension technology is getting there too.
Cost is a factor for sure. Tires are expensive, though I still haven't actually ridden one to its death. I have 4 tires that are in rotating service due to different knobby patterns / handling.
I wouldn't own anything under $1500, but I am a bike snob. If you ride even a moderate amount, cheap components will fail and you end up closing that price gap anyway. Besides, climbing 1500 feet on a fatbike ride hurts a whole lot more on a 40+lb big box, chinese tank, than on a 34lb'er or even my buddy's 28lb fatty.
I guess it's the same reason I will never drive anything of poor quality.
