Thanks for your answers. I suppose the morning that I do this repair I will make sure that there is a new hot water heater available locally for the most likely scenario of needing it.......
Used2cheaptech: There is a shut off valve on the cold supply but it's out of the picture. I'll also put one on the hot side while redoing this - cursing the plumber who installed this hot water heater without one!
Cmyles: Yeah, "galvanic corrosion" is what I meant by "bi-metalic corrosion". I have used dielectric unions on other interfaces connecting new copper (my additions) to old steel pipes (in the walls) in this house, so I understand the concept. So, I assume that one uses a short galvanized pipe nipple on the top of the hot water heater, then a dielectric union above that. If I connect a brass shutoff to the galvanized nipple, do I still need a dielectric union before going to copper? This is how the copper cold water connection is currently connected to the galvanized steel feed, but based on everything else that was done incorrectly, I have my doubts that this is the way to do it.
