I assume these motors are typical DC permanent magnet types. At any constant voltage the rpm varies with torque output. With no load you get the max rpm, as you add load the rpm drops until you stall the motor while the current draw increases as the load increases. In other words, current draw is proportional to the torque delivered.
So you really can't predict rpm from voltage input.
If you were to put a current probe onto the motor input wires I bet you would see a fluctuating current with the number of current pulses per revolution equal to the number of armature poles divided by 2. This might be an easy and non-invasive way to measure rpm.
