A high ceiling in a garage means a lot more than just being able to fit in an engine hoist. My ceiling is 10 feet and I wish it were higher. You can screw in 1/4 inch eyebolts and rig rope hoists to hold your bikes/ canoes/ ladders/ Mothers-In-Law/ whatever up against the ceiling, freeing up valuable floorspace. That is not very practical with an 8 foot ceiling.
I saw a beautiful new home with, I swear, a 14 foot ceiling in the three car garage. I think the builder did it so the roof lines would look "right" but it sure opens up other possibilities. Like an elevated "attic" loft at the end away from the doors, with a workbench and storage under. Yum!
There are ceiling storage systems that are like glorified Closet Maid shelves - they hang from steel straps from the ceiling , and each shelf is 48" x 48". Align them across the ceiling and fill them with all that Christmas crap your wife buys, and suitcases and other bulky stuff you have to find a place to keep. ("She buys, I cry" - my motto.)
I think that the small closets that most houses now have makes it necessary to have extra room in the garage for "stuff". A high ceiling makes that much easier to do.
Your wife will NEVER understand why you want a nice garage. Don't bother trying to explain, but do insist on getting what you want. Otherwise you will be constantly mad every time you step into your garage. just tell her that.
