The 9-5 does share a platform with the '98-'02 Opel Vectra, but the 9-3/NG900 are derived from a much older Vectra. The 9-3 has a beam rear axle and the 9-5/current Vectra have independent rear suspension. The 9-5 shares a floor pan, firewall, part of the front structure , front subframe and rear cross-member with the current Vectra. The new 9-3 will share similar pieces with the 2003 Vectra due this fall.
The basic floor pan of the current Vectra has structure added to it to widen and lengthen it for the 9-5. The engine cradle is common to both cars, but the front suspension and steering rack are mounted in different locations. The front suspension also uses Saab unique lower control arms to locate the front wheels.
If you look at the rear cross-member of a 9-5 you will notice a set of unused mounting holes, they are located closer to the center of the car. These are the mounting holes for the Vectra. The 9-5 uses different rear control arms.
A unibody is basically the entire structure of the car, where as a platform is a series of component sets such as floorpan, suspension parts, brakes, etc. The foundation description given is one of the other replies is a very good description.
