There a bunch of good products, but I prefer Lexol (ease to get and cost). Sure you can swing by Jaguar and get a bottle of 'Leather Food,' but that will set you back about $35 for ONE application.
I was talking to a local leather shop about some work. At the end of the conversation I asked them if they treat their finished product at all. They said they apply a coat of Lexol conditioneer. I was already sold on Lexol, and more after hearing that.
Summit also makes a great water based vinyl/rubber protector too. Vinylex has 60 UV protection and drys to a semi gloss, almost mat finish. It is a cleaner too, and I was impressed on the gunk that lifted from my dash.

PS- I don't work for Lexol, just enjoy the product. Also- recommend you clean the seats well before conditioning. Avoid a cleaner/conitioneer 'all in one' product.
