That's my hometown! I live in Durham now (which isn't anywhere near as nice) but still have family in Asheville and go back frequently. You'll love it there; great, fun town, and lots of good outdoors type stuff. I'll be glad to show you around town a bit next time I'm in the area. What kind of Saab do you drive?
Anyway, as for mechaincs...there are no Saab specific shops in the area (or many Saabs.) There is a dealer that I have no experience with except through the parts department, which is friendly and helpful but low on inventory, at least for the older cars. Precision International has a very good reputation and seem to work on many of the area's Saabs. I believe they just moved to a new location. Jak, who is a regular contributer to the performance board and really seems to know his stuff, works there. It might be worth asking for him specifically for a big job. They are fairly expensive though. I try to do most of my work myself, but had Precision swap my clutch last year since that's a pretty big job: they were prompt and friendly. I don't know of any other good shops in the area for Saab work, but I'm sure there are a few.
Anyway, welcome to the town and good luck with your Saab!
