The cooling fan settings are the other part. The fan settings do more to control temperature in hot weather, and they are designed assuming an 89C thermostat. Switching to a cooler thermostat will not prevent overheating - it will only permit the engine to cycle over a wider range of temperatures, which means more relative motion between the head and the block for the head gasket to deal with.

I think I'm on the side of using the OE 89C stat for 9-3 and 9-5 cars, NG 900s, and late 9000s, all of which control the radiator fans based on the computer's engine temperature reading. The earlier cars, where you can couple the cooler thermostat setting with lower set point thermoswitches for the fans (*** rant on...and this is vital for the earlier 9000s, the one with the thermoswitch set in coldest part of the radiator, but with set points as high as 100C ... rant off***), a lower thermostat set point makes more sense.
