Look for changes in the coolant level. Under load there could be combustion products entering the coolant. That can give the coolant a sooty appearance and can blow coolant of the pressure relief cap.
There are also oil passages in the head. Exhaust gasses when under load can pressurize the crankcase and create oil burning and smoke.
A bad head gasket, depending on exactly how it is leaking can allow oil to enter the coolant and coolant to contaminate the oil. Check the appearance of both after running to stir up whats in the oil sump.
The head bolts are exposed? Can you easily detect any that are loose or busted?
Do you have a coolant heated intake manifold? That is a possible source of coolant into the engine.
A cracked head or block could create such problems.
The amount of moisture that could be in the fuel would not be detectable and would be symetrical.
Can you smell coolant in the exhaust? (Remember that it is toxic)
