If you know how to do it on any Saab with automatic tranny from 94 and up, you know how to do it on a newer Volvo.
It is roughly the same Aisin Warner transmission in Saabs and Volvos.
From 2001 and up, Volvo started to use the newer style transmission fluid called Mobil 3309 (except the S80 that still use Dexron III). Volvos part number for the Mobil 3309 fluid is 1161540 for a 1 Lit bottle or 1161640 for a 4 Lit jug but you might find the Mobil product at the auto store.
Just to be sure, double check with your owners manual for the proper fluid. My statements is for US cars and I don't know if other parts of the world use the older transmission in some 2001 applications. The 2000 S40 use Dexron III.
All depending on how dirty the fluid is but a couple of drain and refill should do it with a test drive in between.
Just loosen the 24mm drain plug in the bottom and let the fluid drain out, add 4 quarts and drive the car for a couple of miles. Drain again and fill up with 3 quarts. That should be enough.
It is also an oil quality monitor system in the transmission computer that should be reset when fluid has been changed but for that you need the Volvo special scan tool VADIS or the newer VIDA. That oil monitor keeps track of fluid over heat sessions and such, so if the monitor is not reset, it might turn on a warning message at some point and time that the transmission needs to be serviced (since it doesn't know you did it).
