The gauges do seem to vary, by the way. I've had two 2.3 9000 full-turbo automatics and on the '93, full boost took the needle to the beginning of the stripy section of the standard gauge. On my '97, I get to the end of it, the beginning of the red. Presumably the boost is the same, it's just the gauge that's different - maybe the later cars are more optimistic, and I'm sure you don't need to worry about getting into the red unless you hit fuel cut-off (which you'll know all about if it happens!).
When I did what you did - cut the orange wire to pin 14 - on the '93 I got well into the stripy section, and on a numbered (not calibrated) gauge this was about 0.95 bar, though it then backed off a little. I haven't yet done the same trick on the '97 but when I do I'll let you know what the gauge reads - would expect much the same as you have seen on your '95.
Maybe the backing off you are experiencing from a standing start is just that boost is restricted in first gear? A few blasts like this will probably adapt the ECU without an adaptation run as such.
