The only way the ceramic coating will come off is if it was not applied properly, or is of poor quality or the wrong temperature range. The coating is much thinner than a single coat of paint. It's not going to get vibrated off, and the exhaust pipe is not bending under any normal driving conditions (i.e. aside from it hitting something)
