I have see the same over and over again. Copper gaskets are used where pressures are such that standard gaskets blow out. Copper can be used, but they leak. Not much of an issue for engines that are raced and torn down frequently. Copper gaskets are insane for daily drivers or if engine rebuilds are not driving the tear downs. If the engine is good, you don't want to be pulling the head.
Some high pressure applications also have the blocks 'ringed' so that wire rings can be inserted to bite into the gaskets. This also is impracticable for many reasons.
Many folks seem to be using Saab gaskets well above 20 PSI of boost on daily drivers and competition vehicles.
You can get ARP racing head bolts, but few bother and have good results. See the LiNk
Someone had an engine rebuilt on this BB years ago, with copper gaskets and it seemed to be a real PIA... always leaked, replaced, always leaked.
