The stock width/offset is 6.5"/27mm. To maintain the same centre to centre wheel dimension, the offset you want is 8mm. You may have to achieve that through a combination of actual offset and wheel spacers. The length of bolt will depend on the spacers. The tire size you'd aim for is 245/40. Having said that, I don't think it's a good idea. 8" is pretty wide, there could be rubbing issues, and getting the offset correct might be a problem. 17x7.5 or 17x17 would make more sense. Unless you hear from someone who has actually done it, I would avoid the 17x8 size.
