heel/toe is as you think, allows you to blip gas while braking during downshift.
double clutch ... when you down shift, as soon as you clutch all the gears in the box (except final drive) start slowing down, but you want them to speed up to make syncro's job easier and the shift smooth. Double clutching means pausing an insant in neutral, with clutch then let out, and throttle blipped to speed all the gears way up before continuing with down shiffting into the desired gear.
if one just pauses and blips revs with clutch still in, midway thru shift, it makes things worse for the syncro. sounds good though.
I had old VW dasher wagon that was fun/easy to do this stuff with, but more difficult with my old 83T.
