If you are doing this because the insulation is disintegrating, then I don't think it's necessary to re-wire the whole vehicle, just the portions under-hood. In my experience, it's heat that kills the wiring, not age.
Assuming that's what you're up against, if it were my car, I'd graft in newer portions of a donor harness at the left side fender, ahead of the fuse box, and by the PS reservoir.
