There are old hard copies of the Mitchell labor book and now its on-line via alldata, both contain standard labor hours for a repair job. For instance a clutch job (R&R) might be X hours, given that you have how long it might take for an average mechanic to to the job, times the hourly labor rate, Y so that X*Y should be your price. Shops might add extra shop and environmental fees, etc.
Labor rates are all over the book and vary by region and shop, what are the "normal" rates in your area? If the mechanic is doing side work, price is negotiable. It also might depend on if you've got a bunch of work or if the work is related, i.e., changing a serp belt and changing an alternator, half the work in changing an alternator is to slip the belt.
Might want to get an another estimate prior to talking to the mechanic, that way you know what the ballpark range.
Hope this helps,
