First, let me agree with everyone else that if the car is running hot there is probably something wrong. If it does it at high speeds try replacing the thermostat (with the 82 degree version) and flush the cooling system. There's also a chance your radiator is blocked up. If it only hapenbs at lower speeds, check to see that the fan(s) are coming on.
However, please note theat "water moving too fast" without a thermostat is an old wives tales. It might make sense intuitively that fats moving water won't have time to be cooled by the radiator, but if you ask an engineer or look through a thermodynamics you'll find that this isn't how things actually work. In fact, the faster the water moves the better. Many "high end" thermostats used in performance cars or cars with marginal cooling systems are drilled to allow extra flow. Of course, a cooling system regulated to an ideal temp is best, but running without the 'stat will remove a restriction and allow better cooling (whether this is a nominal or very large diference would depend on the cooling system, I would imagine.)
