I'd choose fuel pressure. But the mods I did on my 1988 900T were more like Stage 1.75. About 240 hp on a G-Meter. I could put EGT on my Zeitronics box, but getting the sensor in the right place was too much trouble and I figured A/F gave me what I needed. I have fuel pressure, but only under the hood, directly on the rail. With the level of tuning I was doing myself, it was more useful. EGT, in my experience, flying light planes, along with cylinder head temperature (CHT) is important to adjust mixture (A/F) because it is constantly changing with altitude, but those are air cooled engines. If you've got a direct A/F reading, EGT would really only be a backup. Fuel pressure could help diagnose lean/rich mixture, or fuel pressure regulator, fuel pump, etc.
