I just did this conversion on my 1980 900T 5-door. I swapped over LH as well as installed APC and Hall-Effect ignition. It's a snap, nothing confusing, and all very straightforward.
HOWEVER, if you don't have 100% access to a complete car, this could be tough. Getting all the wiring harnesses out takes some time, and some of them should not be cut. So......
Yes, you can use the CIS system. As Ubipa says, there was an article in the Saab Journal covering this, though the article is, more or less, worthless. There is some fabrication that needs to be done - you need to make retainers for the injectors and a bracket for the warm up regulator, but nothing complex... I've seen this conversion in person and nothing seemed too mystical.
See what your budget and parts access looks like and make a decision. There's plenty o' people here who can help out either way.
