Trevor,
From your message, it seems you you are getting initial red boost (well into red zone), but it then drops sharply. What, precisely, is happening with boost? That may give you the clues to find the problem.
If boost drops sharply then tries to rebuild, I'd suspect your APC is detecting knock and cutting boost to avoid engine damage. A quick and cheap test can be made if you can find any 100 octane racing fuel in your area... if so, run the tank almost dry, put in a few gallons, and then see if you are hanging onto boost longer. If you have cranked up the boost without increasing the fuel supply, detonation is very likely.
I would also suspect a wastegate that is not letting you hang onto that power. (Just a guess.) Search for posts on diagnosis of faulty wastegate.
If you boost enough to hit overpressure switch, and you have not adjusted/bypassed it, the fuel supply is cut briefly. Referred to by others as "dash in the face" syndrome, due to what happens when you go from full boost to zero power in a heartbeat. You'll know it if it happens to you.
Good luck.
Jim
