If I were you, I'd weld in another o2 sensor fitting right after the cat. That's where the computer expects it to be - the 2nd sensor is used to verify the functioning of the cat. Leaving it out of the exhaust would at minumum result in a check-engine light. And if yours is one of the states where vehicle inspection involves hooking-up to the car's computer, it won't pass.
Some people on this board with no cat installed have had luck installing the sensor downstream in the pipe, but I get the impression this doesn't always work.
As far as the fitting itself goes, I'd try to get my hands on a stainless one, perhaps from a custom exhaust place or online. If all else fails, you can buy a "spark plug non-fouler adapter" that's sized for the old Fords with the large spark plugs and cut it up - the thread is correct for the o2 sensor.
