FWIW, I would find out what the normal operating ranges are for the measurement that you are monitoring (temp, pressure, etc), and then choose something that is close to that range. If a normal range is 10-50 psi, you don't gain anything by having a larger scale, except to make the useful sweep area of the gauge smaller and harder to read.

My personal experience w/oil temp gauges is to go w/the lower range; most tap off the oil sump for a reading. I found that in cold weather, it could be a LONG way (10-15 miles) before the oil temp would begin to rise, even though the water temp had and the heater was cranking. I found it REALLY useful as an aid to keeping the right foot lighter till the engine had actually warmed up. The highest oil temps usually happened in long stop and go situations where there was no air cooling effect, and was somewhat moderated by the cooling system. Long, hard runs would also raise the oil temp a bit, but not as much as prolonged idling.

My hunch is to stay on the lower side on the oil pressure, too, assuming that the upper end of the pressure range is not usually reached at the sender location. (I'd check what the range is, first) Remember that a larger than necessary scale will mean that the needle moves less given for the same change in pressure. A smaller scale will have more differentiation, and smaller differences will be more obvious when something is changing. Remember that you should expect some fluctuation!
