Aquamist makes a switch. I think you just drill a hole in the resevoir at the level you want it to operate at. The direction you install it in determines if it opens or closes when the level falls below the switch. That would be a straight forward way for you to have a light turn on. But, I think it's a little pricey. Some people have talked about modifying a brake resevoir level switch.
I'm not an electrical engineer, but if you want to use a level sender which varies the resistance with the level, you might be able to use a relay and the right resistors to switch at a specific ohm value. Relays need a certain voltage to activate, so connected in series with your level sender and with another resistor in parallel or series, you could probably do it.
