Well
I don't think you'll get too far w/ B&G springs unless you're looking to add a lot of height to the ride:)
You need to find a spring w/ a smaller free height that will compensate for the new spring mounts that you are installing but also will have enough functional active travel. Maybe a Landrum 9.5 x 5.5" spring (then you might not need a new lower seat) or if you can design a sleek design a 10.5 x 5" spring (this will give you more tire rm but will require a new lower seat). And there's always a 10.5x5 spring.
You could go w/ a couple different designs, One could have just the bottome be adjustable, another could have the bottom be adj w/ a machined upper seat that can be access from the top which allows the spring to turn to adj, and another could have just the top be adjustable. It's all in the design.
Things to consider is desired free height, springrate, functional travel of the springs. Another thing to consider is price. I'd probably go w/ the 9.5 x 5.5 spring
