I'm not sure why'd you want to do this. If you want a performance car it's probably not a 9-3 conv. Even if you had to have a performance 9-3 the conv. is both weaker and heavier than the coupe. Buy a Viggen or better yet a WRX STi.
As far as fiberglass pieces go those prices look cheap to me for one off parts. I'd be skeptical that the hood would include a frame to take hinges and the latch, that the fenders would include the correct mounting flanges and headlight opening details and that the doors would have frames for hinges, latches, and all the window mechanism (or were you not going to have windows).
It's a ton of work to make good fiberglass pieces and those prices don't reflect that. Maybe they're quoting racecar quality stuff, but even then they're cheap and you better be prepared for less than perfect fit and finish.
Also the hood fenders and doors are structural. What are you going to replace this structure with? From a health stand point you better not crash it. From an economic standpoint the car would have no resale value, i doubt if you could even insure it.
