Well I'll answer your 2nd question first cuz it's easier...
When I did my car, I did not use a turbo distributor. Biggest difference between the turbo and NA distributors is the turbo one includes a vacuum-advance / boost-retard capability. Since the EZK ignition that comes with the car already has advance capability, I didn't want to duplicate it on the distributor. From what I read here, it appears that others have removed the EZK, installed a turbo distributor, and installed an APC system to control knock by limiting boost. I haven't personally tried this so it's hard to compare, but it sounds like this setup may provide a little better performance.
Re water injection, many systems are available commercially - do a search on this BBS and you'll find a ton of info. Long story short, they have a water reservoir, an electric pump, and a nozzle that's usually placed in the air duct right before the throttle body. At a preset level of boost, the pump activates and sprays water into the intake to cool the charge. I won't go into too many details because it's a major hack, but I've managed to get good results using a windshield washer motor and a nozzle that sprays into the turbo inlet! By the way, in this context "water" usually actually means a 50/50 mix of water and alcohol so it doesn't freeze in cold weather.
The biggest drawback of water injection (besides cost and complexity) is that if the water runs out while you're at high boost you can trash your motor *very* quickly.
