I know some will disagree with me, so this is just my opinion. If the drums are not warped, out of round, spin true and you have good stopping power, I would not worry about minor pitting. Even if you have groves, shoes and pads will wear into a perfect match and have more surface area for stopping power.
Think about it, the shortest distance is a straight line. Having groves across the face is not a straight line and is longer distance. This longer distance makes more surface area and should equate to greater stopping power.
A couple decades ago I remember a TV ad that sold a product that cut groves into rotors to provide more surface area.
Yes, when grooved some areas are thinner than others. But if they spin true and have the stopping power, I wouldn't worry about it. Especially with something as hard to find as Sonett drums.
